Carrot cake

180 g spelt flour

2 tsp ground cinnamon 
pinch of salt 
80 g sugar 
2 eggs 
1 mashed banana 
140 ml vegetable oil 
1 tsp vanilla extract 
200 g finely grated carrots 
80 g chopped walnuts


250 g mascarpone 
1/2 lemon 
1/2 tablespoons of powdered sugar (to taste)

In a bowl, I mixed sugar, eggs, mashed banana and oil. In another bowl, I mixed the flour, leavening powder, cinnamon and salt. Dry and wet ingredients, I mixed together, and finally added the vanilla extract, nuts and carrots. I mixed and poured into a round mold (24 cm). The dough onto the I put in pre-heated oven at 180 ° c and approx. 35 minutes of hell. After cooling the corpus I gave to the cream. I mixed the mascarpone, the juice of half a lemon and sugar. I spread the cream over the top of the Cabinet.
